What were Caribbean hotels like before trade
winds were replaced by blasts of air conditioning, when morning
exercise was a walk on the beach and when you sat watching the
sunset instead of cable TV? You can still find that Classic
Caribbean at Anse Chastanet Resort on St. Lucia’s quiet southwestern
coast where two magical peaks, the Pitons, leap from the sea and the
mountains are covered with luminous greenery.
Architect owner Nick Troubetzkoy believes
passionately in nature. So he created a hotel that makes the foliage
and the flowers, the perfumes and the peaks, the sea and the bird
song an integral part of your vacation experience. The estate
encompasses 600 lush tropical acres bordering two soft sand beaches.
Not only do you get a World Heritage Site anchored by the twin peaks
on land, the resort’s two crystal-clear bays are part of a
designated marine reserve protecting miles of colorful coral reefs
teeming with tropical fish.
With such a unique setting as his canvas, Nick
Troubetzkoy was inspired to design a one-of-a-kind resort. He was
committed to an environmentally conscious development before “green”
became fashionable.
A dozen rooms are tucked in behind the coconut
palms that line the beach and the remainder tiptoe up a flower
decked hillside. To make the most of the panoramic views and the
refreshing tradewinds octagonal whitewashed cottages come with
wraparound flower draped balconies and louvered windows.
Extra-large deluxe and premium suites underscore
the visionary, innovative, sometimes whimsical side of Nick
Troubetzkoy: in one suite, the balcony is built around a full-grown
red gommier tree; in another a flamboyant tree drapes its red
blossoms around the balcony. Some have their 4th wall open entirely
to the vistas, yet are completely private.
Anse Chastanet’s ever growing art collection
provides a visual feast of its own. There are impressive wooden
sculptures and plaques, earthy burlap compositions, painted “sky
ceilings” and vibrant acrylic paintings invoking memories of Matisse
and Picasso.
And while the sensuous seclusion of the rooms
provides some guests with the perfect excuse for lolling away the
day on the balcony, others head out to partake in the many
activities on offer; yoga, snorkeling, scuba diving, tennis, sunset
sailing, sea kayaking or jungle biking, hiking and bird-watching
among the ruins of an 18th century colonial plantation.
Accommodations
ANSE CHASTANET offers 49 individually designed
rooms, 37 of which are scattered about a lush hillside, and 12 which
are nestled within a tropical garden at beach level.
ANSE CHASTANET emphasizes the use of local woods
and other local products in the room decor and furnishings. Cushions
and bedspreads are made from colorful cotton fabrics called madras,
the island's "national cloth." Even the resort bathrobes are locally
made and have become a popular souvenir item!
The furniture has been individually designed and
handmade in the region with the exclusive use of the island woods
such as teak, mahogany, green heart, red cedar and wild breadfruit.
All rooms have fridges, electric tea/coffee makers and wall mounted
hair dryers, and in-room safes. Deluxe and Premium rooms also have
irons and ironing boards.
Culinary Experiences at Anse Chastanet
Some of the best dining in Soufriere and
St. Lucia can be found at Anse Chastanet. An enticing selection of
menus is available in a number of intimate hillside and beachside
locations and also, you can pre-book private dining arrangements at
the water's edge on Anse Chastanet beach or in our spa cottage Kai
Mer overlooking the Caribbean. Whether you fancy fine tropical
Caribbean Cuisine, exotic Creole flavors, or simple grilled fare,
you will find it available and more. Our culinary options also
include our St.Lucia- East Indian menu titled Apsara, a wholly
vegetarian restaurant called Emerald's and last not least our Jungle
Grill for day time laid back dining on our second beach Anse Mamin.
And of course, all of our kitchen receive organic produce from our
resort farm Emerald's in the Soufriere hills.

Dine in our two open air treehouses
overlooking lush tropical foliage and the Caribbean Sea.
Celebrating award winning Tropical World Cuisine, a blend of
Caribbean with other tropical world cuisine experiences. The
dinner menu changes daily and is served in a romantic
candlelit ambiance, surrounded by beautiful original
artwork. Breakfast is served here daily and dinner is served
daily with the exception of Tuesdays.

ANSE CHASTANET menus always
include vegetarian options and our culinary team is also
happy to meet any other dietary requirements at any time. In
our Piton lounge near the Treehouses, we serve our Emerald's
dinner menu which is entirely vegetarian, showcasing the
organic produce grown on our resort farm Emerald Estate in
the Soufriere hills. Menu selections offer new tastes and
combinations: Appetizers such as Goat's Cheese Fondant,
Balsamic Caramel, Apple Curry and Crispy Rain Forest Calabza
Gnocchi; Entrees such as Tofu, Smoked Paprika, Sour Cream,
Culantro, Cumin and Sweet Potato and Plantain Satay. Dinner
is served daily with the exception of Tuesdays.

ANSE CHASTANET is very actively involved
with the island's local farmers to assist them in
understanding which produce is essential to our culinary
style. Together with ANSE CHASTANET'S horticultural team, we
have recently been further expanding ANSE CHASTANET'S own
gardens, cultivating fresh herbs and fresh fruits which are
grown amidst the historical ruins of the Anse Mamin
plantation, part of ANSE CHASTANET'S 600 acre estate. Fruits
gown on the estate include banana, passion fruit, tamarind,
mango, avocado, oranges, tangerines, guavas, papaya, coconut
to name just a few." We grow our own organic produce on our
Emerald farm about 20 minutes from the Resort. We only use
certified organic seeds.

The Trou au Diable Restaurant is located
right on the Anse Chastanet beach. Here we serve breakfast,
lunch and dinner daily. The lunch menu offers a wide and
varied choice of appetizers, salads, sandwiches, burgers and
Caribbean and Creole specialities.
On Tuesday evenings, all guests enjoy a
special Caribbean culinary evening in the Trou au Diable
Restaurant, which commences with a cocktail reception at 6
30 p.m. The atmosphere is festive with the entire stretch of
beach in front of the restaurant lit up by flambeau candles.

The Trou au Diable restaurant offers a
special Indian theme menu titled APSARA on all evenings
except Tuesday. APSARA is an innovative fusion of modern
East Indian and Caribbean cooking, a celebration of St.
Lucia historical and cultural ties with East India.

Lunch can also be enjoyed at mid
hillside level in the Piton lounge, away from the beach and
overlooking the Anse Chastanet bay and coral reefs.

On all evenings except Tuesdays, we
serve a beach grill menu in the beach bar giving our guests
the option to enjoy light grilled fare near the water's edge
in a casual setting.

The Jungle Beach Bar & Grill, located on our second beach
of Anse Mamin, is open from 10 a.m. to 4:00 p.m. daily with
lunch served from noon to 3:00. The relaxed and laid back
atmosphere on this exotic soft sand beach makes the Jungle
Grill a favourite with many of our resort guests.
